A few years ago my uncle made me a Vietnamese Iced Coffee and it was great. Granted, coffee in a Phin Filter over condensed milk isn’t the most healthy of treats.

A couple of weeks ago (while on my fabulous Staycation) I decided I wanted to make a healthier version.

I picked up Phin Filter filter and instead of using condensed milk, I used coconut milk – the richer stuff in the can.

If you keep your coconut milk in the fridge it will thicken up.  I also put in a teaspoon of Coconut Sugar (lower on the GI scale than regular sugar).

Then I let my coffee drip into it.  You can have it warm or over ice – it’s great both ways.
